Skinny Cocktails for Summer!

This month is all about getting out on the water, enjoying the warmer weather and gathering with friends and family. Sunny weather, summer vacations and get togethers also usually go hand and hand with having a few “adult beverages!” Although some of those summer drinks can taste SO good, we often forget how many calories we are consuming in these tasty refreshing drinks. Here’s a few of my favorite “lighter” cocktails versions which can be delightful yet not damaging in calories. Each recipe contains about half the amount of calories in the traditional drinks.

Skinny Margaritas (on the rocks!)

This Skinny Margarita recipe was developed over the years by my dad. Over the last 20+ years of spending the winters in the Puerto Vallarta area, my Dad has been “perfecting” the perfect skinny margarita.   The best part is they are quick and easy to make and also much more low calorie than the margarita!

*Makes 5-6 drinks;

6 oz. tequila (we use Casadores) 3 oz. Cointreau (orange liquor) 3 oz. KEY lime juice (freshly squeezed) *be sure to use KEY limes or else it is too tart 1 can Sprite Zero margarita salt

1)mix all ingredients together in a pitcher 2)rim the margarita glasses with margarita salt 2)add ice to margarita glasses 3)pour mixture over the ice enjoy!!!

Here are a few more summer fun cocktail recipes that allows you to get in some fruit at the same time!

Strawberry Daquri:

*Makes 4- 10 oz. servings

2 cups fresh or frozen strawberries

1 juiced lime

2 tbsp. raw honey

12 oz. water

4-5 shots of white rum

12-14 ice cubes

1) Place strawberries, lime, honey, rum and half the water in a blender and throuruly blend

2) Add ice and remaining water to gradually reach the desired consistency.

Skinny Watermelon Mojito:

Makes 5-6 drinks;

10 oz. skinny simple syrup (Boil 1 cup water and add 3 grams Stevia; stir until dissolved.  You can flavor it by also adding things such as mint leaves and let it steep for 30 minutes)

  • 5 oz light rum
  • 10 mint leaves
  • 3 cups watermelon pureed
  • juice of 3 limes
  • approx. 30 oz of Club soda
  1. In a glass, pour simple syrup, rum, and lime juice. Add the mint leaves and muddle.
  2. Add pureed watermelon then the ice. Top it off with club soda.   Enjoy!!
