Zesty Quinoa Salad

What We're Making

This Meal prep Monday was an easy, healthy zesty quinoa salad-perfect for any summer night or BBQ!  This dish can be used as a main meal or a side dish.  The black beans add a perfect boost of both protein and fiber. Quinoa has many health benefits such as; a higher content of fiber and protein than most grains, gluten free, low glycemic index (perfect for blood sugar control) and contains higher amounts of iron and magnesium than most grains.

You can adjust the amount of red pepper flakes in the dressing, depending on how spicy you like things. I have also used Tabasco in place of the red pepper flakes, as this makes a great alternative and adds a nice peppery flavor.

Ingredients

Salad;

1 cup quinoa

2 cups water

1 15 oz can black beans

1/2 chopped cucumber

2 chopped scallions

1 cup chopped tomatoes

 

Dressing:

1/4 cup olive oil

1 squeezed lime

1/2 tsp red pepper flakes (or Tabasco)

1/2 tsp salt

2 tsp ground cumin

Instructions

1)cook quinoa according to directions and let cool

2)chop tomatoes, cucumbers & scallions.

3)add chopped veggies and drained black beans to the quinoa

4)mix together the dressing in a separate bowl; olive oil, cumin, red pepper, lime juice

5)toss the dressing over the salad and mix

*Perfect as a main meal or a side dish
