Tonight’s meal prep was a low carb, keto friendly meal. This is such an easy meal to prepare and tastes delicious! There are several variations of this recipe on the internet, but this was an easy healthy one which was quick and used the least amount of ingredients. I love using Zucchini in place of pasta. This is a great way to get in some veggies without the heavy carbs. If you are wanting to add some carbs to this meal, you could serve it with rice or even some whole wheat pasta. As always, I had fun showing how to make this one for you all!

1 lb ground turkey breast
1 cup tomato sauce
1 cup salsa
1 tsp garlic powder
1 tsp chili powder
Salt & pepper
1 cup grated low fat cheese
1)cook ground turkey breast in a pan
2)once turkey is cooked, ass in spices, tomato sauce and salsa
3)cut ends off Zucchini & cut Zucchini in half. With a spoon, scrape out the inside. Add the Zucchini mixture of 1 Zucchini to the meat mixture
4)place zucchini boats in a glass pan
5)add approx 1/2 cup meat mixture to each zucchini boat and top with cheese
6)bake at 375 for approx 20-25 mins.
