Spicy Chickpea Quinoa Bowls

For this Monday night Meal Prep, I was looking for something vegetarian, gluten free, and of course, quick, easy and HEALTHY!

I came across this recipe inspired by and it was a HIT! This recipe was not only vegetarian, but it was also vegan as it didn’t contain any dairy. I was impressed with the punch of flavors this recipe packed and it make great leftovers for lunches! To add in some veggies, I served my bowls with a cup of arugula.



  • 3 garlic cloves chopped
  • 1 chopped onion
  • 2 15oz cans rinsed chickpeas
  • 1 15oz can diced tomatoes
  • 1tsp cumin
  • 1/2 tsp red pepper flakes
  • Salt & pepper.
  • 2 cups quinoa cooked
  • 1 tbsp olive oil


1)Add 1 cup of Quinoa & 2 cups of water to a pot of boiling water.  Boil for 15-20 mins.

2)In a large skillet, add oil over medium heat and saute onion and garlic until fragrant (approx 3 mins)

3)Add in chickpeas, tomatoes and the rest of the ingredients, stirring to combine.

4)Cover the pan and simmer for approx 10-15 mins.

5)To assemble bowls, add 1/2 cup quinoa in each bowl with 1/2 cup of the chickpea mixture.
