Spicy Chicken Rice Bowls

On tonight’s Meal Prep Monday, I was inspired by one of the Hello Fresh meals we recently had, so I decided to make something similar. My husband and I have Hello Fresh meals 2x per week, as it gives me good ideas on other meals and its really convenient! This recipe is a “one pot dish” and includes a great spicy sauce to spice up plain chicken and rice. The meal also took about 20-30 mins from start to finish and was super easy and healthy-that’s my motto when it comes to healthy eating!

1lb chicken breast
1-2 cups (cooked) rice (I use brown)
Mrs. Dash seasoning (any flavor)
1/2 cup chopped tomatoes
1/2 cup chopped celery
2 chopped carrots
1 cup chopped green pepper

Spicy Sauce:
1 cup non fat, PLAIN Greek yogurt
2 tbsp sour cream
2 tbsp hot sauce (I used Cholula)


1)Cook the rice according to package directions
2)Chop the tomatoes, celery, carrots and green pepper
3)Season the chicken breasts with Ms.Dash (or any seasoning you want)
4)Add oil to a large pan and over medium high heat, add the chicken until browned (approx 2-4 mins per side).
5)Set the chicken aside on a plate. Using the same pan you cooked the chicken, add the carrots, celery and green pepper. Cook until slightly softened (about 4-5 mins) Then add the tomato a cook until softened (about 3-5 more mins).
6)Make the Spicy Sauce-combine Greek Yogurt, sour cream and Cholula into a small bowl. Add approx 1 tsp of water. Mix together.
7)Transfer chicken to a cutting board to slice into bite sized pieces then add rice, vegetables and top with the spicy sauce.
