One-Dish Chicken with Green beans and tomatoes

Tonight’s QUICK and EASY Meal Prep was inspired by a recipe I found on

My Fitness pal is an app which I use to track my food intake. Its a great tool to help you see how many calories you are eating and what your macro-nutrient breakdown is (Ie/How much protein, carbs, fats and fiber you are getting). 1-2lbs chicken thighs (or breasts)

1 tbsp olive oil

1/2 cup chicken broth

2 tbsp balsamic vinegar

1 lb green beans

1 pint cherry tomatoes (halved) Salt & Pepper


1)In a large sauce pan, brown chicken thighs in olive oil over medium heat

2)Add chicken broth and balsamic vinegar

3)Cover and reduce heat, simmering for 10 mins.

4)Add in green beans and sliced cherry tomatoes.

5)Stir for about 3-4 mins until the green beans are tender and chicken is cooked through.

6)Season with Salt and Pepper. Serve and enjoy!
