Low Carb Crock Pot Lasagna

Adding a crock-pot meal in once a week can be a great time saver. Its fairly quick and easy to add all the ingredients either the night before or in the morning to have a fabulous, ready made meal for dinner. This is one of my favorite EASY and LOW CARB crock-pot recipes for those cold winter days! It tastes just like lasagna, but is a lot lower in calories and carbohydrates.

3 Zucchini (sliced lengthwise)
1 egg plant (sliced)
1 Red Pepper (chopped)
1 Red Onion (chopped)
2 eggs
1 cup Low Fat Cottage Cheese
16 oz can tomato sauce or your favorite marinara
2 cups Low Fat Mozzarella Cheese


1)Cut Zucchini & Egg plant into slices lengthwise
*Optional; broiled eggplant and zucchini in the oven for approx 10 mins to take some of the moisture out

2)In a separate bowl, mix together eggs and cottage cheese

3)Add to the crock-pot layers of;

1/3 cup tomato sauce
2 zucchini slices
2 egg plant slices
1/3 mixture of onion & pepper
1/2 cup cottage cheese and egg mixture
1/2 cup mozzarella cheese

4)Repeat the above process 2 more times

5)Set on high for 2 hours or low for 4 hours
