Trying to stay in shape or maintain your weight this summer?  We all know how hard this can be, with BBQ’s, parties and fun around the summer time.  Since Summer is in full swing and July fourth is approaching, I have a great LOW CARB idea for your next BBQ or July 4th party. Instead of serving regular high calorie, high fat potato salad at your next BBQ, try this low carb Cauliflower Potato Salad. This is a great way to impress your guests without loosing the flavor of traditional potato salad. Did you know that in just ONE cup of regular potato salad, there is approx. 350 Calories, 20 grams of fat and 30 grams of carbs?! I know, shocking right?! And that’s just a “side dish.”  By substituting cauliflower in place of potatoes, and replacing the high fat mayonnaise with Greek Yogurt, you will save sooo many calories, fat and carbs. This recipe contains less than 50 calories per 1 cup serving, almost zero grams of fat and less than 10 grams of carbs per serving.  Give it a try for your next BBQ!

Ingredients

1 head of cauliflower    **If you are also not ready to jump into this recipe and go “full on” Cauliflower, I encourage you to try mixing half cauliflower with half potatoes

4 hardboiled eggs whites (chopped)

2 celery stalks (chopped)

4 dill pickles (chopped)

Dressing:

2 tbsp Dijon Mustard

Salt & Pepper to taste

1 tbsp dill weed

1 cup nonfat-plain Geek yogurt

Instructions

1)Cut the cauliflower into bite sized pieces and steam or boil for approx. 5-7 mins until the florets are almost soft. (once drained, let the cauliflower sit for approx. 10 mins in a strainer to let the water come out)

2)Hard boil the 4 eggs and chop the whites into bite sized pieces once cooked and cooled.

3)Chop the celery and dill pickles

4)Mix everything together in a large bowl
