What We're Making

Summer is in full swing now, but how are your health/weight loss goals coming?! Are you able to stay on track?! Yikes! I think I know your answer, because I’m definitely with you on this!

Summer can be a hard time to stick to any fitness/health goals but we can at least “try” to make some of our choices a bit healthier so were not stuck with a bunch of weight to lose at the end of the summer. (If so, I’m here to help!)

Let’s talk BBQ season. I personally love cooking on the BBQ because there are so many healthier options you can make without having to add in a lot of oil or sauces etc.. Just beware of those hidden calories and sugar in traditional BBQ sauces.

When KATU’s Kara Mack and the film crew came to my house last week, I showed her some ideas on how to have a healthier BBQ this summer-to check out the segment, click below; (as you can see my dog, Nacho stole the show!!!)

Ingredients

LOW CALORIE Lemon and Garlic marinade for chicken

Prep time: 5 mins

Marinade time: 4-8 hours

**Makes about 1/3 cup of marinade, enough for 1-1/2 lbs of chicken.

 

Ingredients:

3 tbsp olive oil

2 1/2 tbsp lemon juice

3/4 tsp cumin

2-3 garlic cloves (minced)

1/2 tsp salt

1/4 tsp black pepper

Instructions

Directions:

1)Pierce chicken several times with a fork (to allow marinade to soak in) and place chicken in a large zip lock bag

2)In a medium bowl, add olive oil, lemon juice, cumin, garlic, salt and pepper. Mix well

3)Add the marinade to the zip lock bag with the chicken, and remove any excess air

4)Refrigerate chicken marinade until ready to grill (approx. 4-8 hours)
