Black Bean Burgers

What We're Making

This is probably one of my favorite Meal Prep Monday recipes!! These quick and easy black bean and quinoa burgers are a perfect alternative to a meat patty–they are also Vegan as well. The recipe took me about 15 mins from start to finish (including cooking the quinoa!).

The recipe makes 4 burgers or you can double and have extras for lunch or dinner. You can eat these over a salad (burger salad!) or add to a thin bun (I prefer Food For Life Ezekiel english muffins) https://www.foodforlife.com/product/english-muffins/ezekiel-49-sprouted-whole-grain-english-muffins

 

 

Ingredients

1 15oz can black beans

1/3 cup cooked quinoa

1/3 cup breadcrumbs

3oz tomato paste

1 tbsp Italian seasoning

Salt & pepper

1 tsp Garlic powder (or salt)

Instructions

1)Drain & Rinse black beans

2)add beans to a medium bowl and mash

3)add quinoa, tomato paste, breadcrumbs and spices 4)mix until everything is well mixed.

4)form mixture into 4 patties

5)grill in a pan with a little olive oil
