Banana Nut Protein Muffins

What We're Making

These muffins are one of my most requested recipes! I used this recipe a lot when I was prepping for fitness competitions and needed a quick and healthy breakfast or snack. These muffins are packed with protein (egg whites), complex carbohydrates (oats/bananas) and healthy, flavorful fats (walnuts). All you will need is a blender or food processor to mix the ingredients together so there’s minimal clean up and mess!

This recipe makes about 6-8 muffins. I put two muffins in small zip lock bags for an easy on-the-go protein filled snack or breakfast. These can also easily be re-heated.

Here’s how I made them:

 

Ingredients

Makes 6 – 8 muffins.

(I eat 2 muffins for breakfast or for a snack)

1.5 cups egg whites

1 cup oats

1 banana

1/4 cup walnuts

To taste:

1 tsp cinnamon

1 tsp coconut sugar, honey or stevia

t tsp baking powder

Instructions

1)Add all the ingredients to Blender and blend until everything is mixed together
3)Pour into an oiled muffin tin (filling ¾ of the each tin so there’s room for the muffins to rise)
4)Bake for approx. 20 minutes at 400 degrees or until the muffins are no longer wet in the middle (I use a toothpick to check)
5)once cooled, transfer 2 muffins to individual sandwich bags or Tupperware and store in the fridge for up to 4 days.
