For this weeks “Meal Prep Monday,” I was thinking about the Christmas holidays coming up and wanted to make a healthier appetizer.ย  With all the holiday parties this time of year, I wanted something I could bring to a party.ย  This recipe is super simple and it becomes healthier by swapping out regular bacon for turkey bacon. This snack is also packed with protein, keeping you fuller longer! The yogurt dill dip is a perfect combo to add to this recipe. You can also make this meal just for dinner-add some rice and you have a full meal–hope you enjoyed this one as much as I did! Happy Holidays!

2 Chicken Breasts

12 Asparagus spears

6 slices of turkey bacon

1/2 tsp salt & pepper

1 tbsp garlic powder

3 tbsp lemon juice

Yogurt Dill;

1 cup Greek yogurt

1 tbsp chopped dill weed

3 tbsp chopped parsley

3 tbsp lemon juice




1)Slice chicken breast into thin strips (lengthwise)

2)Slice turkey bacon in half (lengthtwise)

3)In a medium bowl, combine together; sliced chicken, lemon juice, salt, pepper and garlic powder

4)Wash asparagus and wrap the strips of turkey bacon around each sphere.

5)Wrap the chicken around each asparagus sphere over the turkey bacon.

6)Place asparagus, bacon and chicken spheres on a greased pan.

7)Cook at 425 degrees for approx 15 mins.

Yogurt Dill Sauce;

1)Combine together in a medium bowl; yogurt, dill, parsley, salt & lemon juice

2)Mix well and serve as a dip for the asparagus spheres.
