Who doesn’t love Nachos!?? I think I can say I don’t know one person that isn’t a fan of some cheesy, tasty nachos!! However, most nachos you order in a restaurant or pub are LOADED with calories and fat. The combo of the cheese and fried tortilla chips makes for a double whammy on the waist line!! Here’s a “lighter” version of the traditional nacho dish, made over with lots and lots of protein and a healthier version of the tortilla chip. You can also use sliced sweet potatoes in place of the nacho chips. The meat mixture is also great to use for future meals such as chilli or taco salad.

-2 packages of ground turkey or chicken breast
-1/2 chopped yellow onion
-1 package taco seasoning mix
-1/2 cup water
-1 can salsa
-1 can of black beans
-low fat or 2% grated cheese
-1 bag organic corn tortilla chips
-1 jar jalapeños peppers ????
1)cook onions & ground meat in a large pan
2)add in taco seasoning, water, beans & salsa
3)add 1 bag of crushed tortilla chips to the bottom of a baking dish
4)add approx 1/2 meat mixture over the tortilla chips
5)top Nachos dish with approx 1 cup grated cheese and 1/2 cup jalapeños
6)bake for approx 20 mins at 350
**you can use the rest of the meat mixture with rice or over salad for extra meals!
