Easy Stuffed Peppers with Turkey and Rice (Mediterranean style)

3-4 Bell Peppers
1 lb Ground Lean Turkey Breast (or chicken)
1/2 chopped red onion
1 tsp minced garlic
1/4 cup pitted and chopped Kalamata olives
2 cups Brown rice (quinoa or orzo)
1 tbsp Red Wine Vinegar
1/2 lemon juice
2 tbsp Greek Seasoning
1 cup low fat Feta Cheese
1)Cook the rice in advance
2)Cut the peppers in half, removing the seeds and membrane
3)Place cut peppers in boiling water for approx. 3-5 mins.
4)Drain peppers and set aside
5)Brown the turkey meat with the onion and garlic
6)Once meat mixture is cooked, add the remaining ingredients (rice, olives, red wine vinegar, lemon and greek seasoning) except the Feta Cheese and heat remaining ingredients.
7)Scoop the meat mixture into the pepper halves and top each pepper with the crumbled feta cheese.
8)Cook at 350 for approx. 15 mins.
