I did a Facebook live this week on a super simple, Salmon salad dinner. I love making clean & healthy meals super easy!!! Check out my Facebook page to see the full video!
Here’s what you’d need for my tasty, EASY Salmon Salad:
- Salmon Fillets
- Pre-washed & ready mixed Kale, Spinach and Red leaf lettuce mixes
- Reduced Fat Feta Cheese
- Salt & Pepper
- **you could add any other veggies to the salad you had on hand (tomatoes, cucumber, broccoli etc.)
- Balsamic vinegar
- Dijon Mustard
- Stevia (to taste)
1)Season the salmon fillets with any type of seasoning (I used Costco’s no salt seasoning) Fry the salmon fillets in a pan (Salmon has natural oils, so adding extra oil to the pan is not needed)
2)Mix together the lettuce, feta cheese, mushrooms & any other veggies you have on hand(top with salt & pepper)
3)Mix 2 parts balsamic & 1 part Dijon mustard together in a separate bowl
4)Top the salad with the dressing & serve the salmon on top
