Easy Chicken Muffins!

img_4306I have many people ask me for easy, healthy food that they can take when they travel. These chicken muffins are one of my favortie go-to’s when I’m travelling because they are so easy to make!! Once they are made, you can put them in tupperware or zip lock baggies and take with you. They are a quick easy snack when on the go!


1 lb ground chicken or turkey
1/2 cup oats
1/2 cup egg whites
1 whole egg
1/2 onion chopped
1 pepper (or any veggies you have!)
Any spices. I used mrs dash & garlic salt.
1)Mix all the above together in a bowl
2)separate into a muffin tin
3)Makes 12 muffins-approx 2 oz per muffin!
*works great if you freeze them too!
