Tonight’s MONDAY NIGHT MEAL PREP was a creamy chicken & avocado salad. This is a great alternative to the traditional chicken salad recipe made with mayonnaise, saving you lots of calories and excess fat! The avocado and Greek yogurt replace the mayonnaise, providing a much lower calorie option.
You can pre-bake the chicken breasts in the oven (or crockpot) or you can buy pre cooked shredded chicken from the store if your short on time. Its advisable to use the lime juice to keep the avocado from turning brown in the salad.
Once this mix is ready, you can store it in your fridge for a few days and use on toast for breakfast, a wrap for lunch or on a salad for dinner!
This is such an easy recipe to make and takes about 10 mins once the chicken is ready. Once the cooked chicken is ready, shread the breasts with 2 forks. Then add the mashed avocado and Greek yogurt. Once this is all mixed together, you add the onion, cilantro and then the spices (salt,pepper,garlic powder or cumin powder), and you are done!
Creamy Chicken Salad;
2 chicken breasts
1 ripe avocado (mashed)
2-3 tablespoons plain Greek yogurt
1 tablespoon lime juice
1 tablespoon finely diced onion
3/4 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon garlic powder (or cumin)
1 tablespoon fresh cilantro, chopped
